the lagoon, operates. Fishing here relies on a number of cages and traps, as well as the flat-bottomed boats called koritos. The sand dunes (3) are an important habitat for juniper shrubs, Phoenicean juniper, kermes oak, pistacia, strawberry trees, myrtle, bay laurel and pink rock-rose. Νorth-east of the lagoon (5), you will see thickets of reeds, salicornia succulents and small marshes with pools and streams. The area is a nesting ground for a large number of birds, such as greater flamingoes, cormorants, widgeons, egrets and ferruginous ducks. At the lagoon, you may see fishers using special techniques to catch eels, grey mullet, sea bream, shrimp and crab. Many of them know natural ways to make the fish roe bottarga.
